Things have been a bit busy lately. With what? I’m not totally sure, but I do know that I’ve been having that recurring feeling of things piling up a bit and wishing that there were more hours in the day.
The funny thing about when things get busy for me is, I tend to cook more. I think that it helps de-stress me and sort things out. So, if you follow me on Instagram and start to notice a whole bunch of cooking photos, you’ve got a good idea that things are a bit hectic. I think that it also helps me feel better in the sense that, even though things are busy, the hubs and I can sit down and enjoy a nice meal together and connect (code word for no phones during meals) (except for pictures of course!).
my dad’s seriously famous caesar (I promise to give you the recipe soon!)
super simple tomato and thyme tarts for lunch
we had way too much fun jumping for a friend’s birthday
taco tuesday (we tried these taco boats and loved them!)
daffodils always make me smile
I slow roasted these babies (3 hours) – and then we top them with a bit of homemade ricotta and fresh basil
a surprise love note from my sweetie (insert heart melting)
stuffed artichokes (pre-bake), another fav around here (kudos to my father-in-law) and one I’ll definitely share the recipe for – the stuffing is addictive!
I hope that you have all been having a great week! What kinds of things do you do to help keep sane when you’re busy? Do you have any favorite things that you do to relax and mentally de-clutter?
