Pie for Dinner

On our third and final dinner from Blue Apron for the week, we majorly enjoyed the task of making and eating Chicken & Sage Biscuit Pot Pie.  Yummmmm-o!  We are both major pot pie lovers in this house, so we were definitely looking forward to making it, baking it and enjoying it.

Just like our two previous meals, the instructions were very easy to follow.  The only slight differences that we had from their instructions, was that we cooked our vegetables a little bit longer than they had calculated, and I couldn’t help but deglaze the pan with a little white wine.  After all, wine not?!?!

What was great about this meal was that I tried something new, poaching chicken.  I know, silly right?  My Mom has been a long time lover of poaching chicken, and for whatever reason, I just have never tried it out.  Well, I am officially a chicken poaching convert.  Even though the chicken was just poached in salted water, it came out so juicy and flavorful.  I will definitely be adding that into my chicken cooking repertoire.

Once all of the ingredients were prepped and cooked, we could barely contain ourselves until the pot pie was out of the oven.  Luckily for us, it only bakes for 15 minutes, so we didn’t have to wait very long.

And just in case you are wondering, yes, it did taste every bit as great as it looks.  The pot pie was creamy and thick, the veggies were flavorful, and the biscuits were to die for – fluffy, flaky and crunchy on top.  Although we seemed to have a little problem with someone wanting to eat all of the crunchy top bits off of the biscuits (my apologies to the Mr).  We also got an added bonus with this meal – it made 3 servings, so we shared the last serving for lunch with a little salad the next day, a total treat!
