The Mr. and I were recently invited to an annual BBQ hosted through a work relationship. The hosts always go out of their way to make it a fabulous time from the moment you enter, until the moment you leave. Last year we received glasses of Prosecco on our way in, and as we left, they had hired a local Hawaiian shave ice food truck to come and make us all shave ice’s for the road. Needless to say, we always look forward to this event.
This year, they decided to go with a Mexican theme…and it was ah-ma-zing. So amazing, that I became distracted by all of the food and neglected to take more than a handful of pictures, so you’ll have to use a little imagination here.
Our entrance cocktails this year were margaritas made with fresh limes, and there were endless appetizers on offer. However, we both choose to skip the apps and just stuff ourselves with the made-to-order mini quesadillas. And then there was dinner – one of the options being Paella – and boy was this one serious Paella.
There were also giant whole fish that had been cooked in banana leaves (I’m talking 4 foot long fish), stuffed peppers, grilled veggies, and the most delicious steak tacos.
Seriously, this tacos looks simple, but they were mind blowing (it actually makes me a little hungry just looking at this!).
After eating way too many tacos, we were about ready to call it a night, when the host invited us all to grab dessert from their Baskin Robbins ice cream bar. Yep, they hired Baskin Robbins to come and make us all personalized sundaes. Luckily I was able to find a little extra room to squeeze in a sundae.
