The weather on Sunday was a bit overcast and cool, so the Mr. and I were both craving something a little heartier in flavor. Lidia Bastianich’s Pasta with Sausage Tomato Sauce immediately came to mind. You slowly simmer this sauce down to just about nothing, giving you the most rich and delicious sausage ragù that you could possibly imagine.
The recipe itself is super easy to follow. On Sunday, I decided to cut it down to make just enough for that night, and we also opted to have zoodles instead of pasta.
While your onions simmer away, hand crush your can of tomatoes, and break up your sausage with some white wine.
Once your onions have softened, first add the sausage, then add the tomatoes and let the sauce begin to bubble.
Cover your pot and let your sauce simmer for at least a good hour, until it looks like this:
Time to get your zoodles ready! ( I am still loving this zoodle maker.)
Toss the zoodles into the sauce and let it get all friendly. And you are officially ready to tuck in!
