Princess Waffles

Like all of the best things in life, it is the simplicity that makes these waffles so very special. That and the memories. Because for me, Princess Waffles meant weekends, family time, cartoons, sleepy eyes, the unmistakable high-pitched screech that would come from my parents waffle iron, pajamas, gathering around the breakfast bar, and just being together. But as long as you can pull together some waffles, strawberries and whipped cream, then you are good to go. The memories will come, it’s sort of a package deal.

As a child it was always the same – a piping hot homemade waffle, topped with a large scoop of still slightly frozen Cool Whip, and then those deliciously sweet, previously frozen boxed strawberries dripping in all of those yummy, sugary juices. But however you like it – homemade, store-bought, or a combination of the two – they will be absolutely delicious.

Princess Waffles Recipe

Waffles of Your Choosing – We follow this Buttermilk Waffle Recipe, with the addition of 1 1/2 Tablespoons of Sugar. Additionally, we skip the optional lemon and blueberries.

Whipped Topping of Your Choosing – We use this Ina Garten Sweetened Whipped Cream Recipe + the decadent addition of 1/2 of a fresh Vanilla Bean.

Strawberries of Your Choosing – We’ve recently been using fresh strawberries from J.R. Organics since they are in season right now – they can be found at the Little Italy Mercato on Saturday mornings, or the Hillcrest Farmer’s Market on Sunday mornings.

Top your freshly made, warmed or toasted waffle with a generous plop of whipped cream, sprinkle on a good sized helping of strawberries, and then dig in!

Funny enough, we can’t quite seem to pinpoint why we started calling these Princess Waffles. Since I was most likely too young to remember the origin, I asked my Mom. And as it turns out, she couldn’t quite put her finger on it either. It may have been from a birthday party, or possibly a cousins sleepover, or maybe even just a regular family weekend brunch.

But regardless of the how or why, my parents so cleverly took something simple (waffles, whipped cream and strawberries), and they made it into something that would forever feel special. And for me that’s part of the magic of being a kid, but also part of the magic of having such special parents. I may be a little too old to do half of the things that I did as a kid (depending on who you ask), but I’ll definitely never be too old for a Princess Waffle.
