Lately

I hope that you all had a great Halloween weekend!  Can you believe that it is already November?!?  (This year is seriously flying by.)  This past week has been so much fun with Halloween and lots of baking and new recipes that I have been cooking up.

Our friends made us an amazing rib dinner last week, so we offered to bring dessert.  I made these Molten Chocolate Espresso cakes with Chocolate Ganache, and they were to die for.  (Added bonus: there was leftover ganache, so we made some chocolate dipped strawberries as well!)

I whipped up a few Pinterest recipes that I had been eyeing up, and they were both home-runs!

butternut squash carbonara / creamy pumpkin prosciutto rigatoni

For the “carbonara” I made a hybrid recipe between this one and this one.  It’s a little putsy, but oh so worth it.  And the Creamy Pumpkin Rigatoni is a satisfying recipe that pulls together super quick – it’s the perfect recipe for a weeknight supper.

We finally made a batch of our favorite doughnuts, Pumpkin Spice.  Hot from the fryer, dunked in vanilla glaze, these babies are seriously addictive.

We carved our pumpkins on Halloween – and they turned out so cute!  I also tried some new recipes for roasting the seeds this year, and they were a hit.

The Mr. and I had so much fun dressing up for Halloween – we went as Wednesday Addams and Uncle Fester.  And of course, we couldn’t show up to the party empty-handed, so I made my Mom’s famous Scotch-a-Roos!

They may not look like much, but I promise you, they are ridiculously good.  They are sort of a peanut butter rice krispie topped with a chocolate-butterscotch icing.

I also finally got around to a little craft project that I had had my eye on.  I glittered up some tiny pumpkins, and they turned out so cute!

With rain in our forecast, I set my sights on making some soup, and not just any soup, Julia Child’s Split Pea Soup.  I had actually never made it before, but I knew that it would not disappoint.

And let me say, not only did it not disappoint, it was out of this world delicious.  This is probably my most favorite soup that I have ever made.  I did take the time to make the ham stock, and it really sealed in that hammy flavor.  Perfect for a rainy night!

And after all of the rain that we got?  2 rainbows in one day.  Lucky me!  This past week has been filled with lots of sweets and treats and Halloween fun.  I hope that you have all been having a great week too.
